It's been a long while since I posted! This menu's posting is a bit late, but the menu itself isn't. Like usual, I planned and shopped for it on the weekend.
Monday: Potsticker Stirfry (aka I sauteed a bag of frozen potstickers from Trader Joe's along with broccolini, red cabbage, peppers, and shiitakes. And, of course, garlic and onion. Add soy sauce, white wine vinegar, hot sauce, and a drop of sesame oil, and you're good to go!)
Tuesday: Homemade Hideaway Bakery Chicken Sandwiches with Roasted Cauliflower and Roasted Yukon Gold Potatoes (Since I don't eat grains or starches of any kind, my sandwich is breadless and the potatoes were just for hubby. And the Hideaway sandwich is one of our favorites, so I decided to try it at home -- delicious! I grilled some rosemary-marinated chicken breasts, sliced them, and put the chicken on a fresh, toasted-and-rubbed-with-garlic ciabatta roll topped with caramelized onions and pickled cabbage. Divine.)
Wednesday: Cena Latina (Black beans and rice, tostones, sliced avocado, and red cabbage salad)
Thursday: Dining out at the uniquely Eugene and absolutely delicious Poppi's Anatolia for Bites for Rights!
Friday: Mediterranean Melts (No toast for me on this one, obviously; I put the delicious stuff over a bowl of garbanzo beans and it's equally yummy.)
Saturday: Date Night! We're going to see the fabulous Pink Martini and we're having dinner with friends beforehand.
Sunday: Not sure yet... depends on the weather! I'd love to grill something on our back patio.

Menu Plan for the Week
Well now that you know all about my new crazy eating restrictions, this week's menu will probably make more sense. I'm trying to approach it as an opportunity to get very creative. If you've got any ideas, please send them over!- Sunday: Annual Oscar Night Smorgasbord (ie, lots of things to nibble and pick at: eco-kosher salami, cheeses, olives, nuts, fruit, crackers for hubby)
- Monday: Roasted Cauliflower "Mac" & Cheese and Salad (I have got to post this recipe. So easy, so delicious!)
- Tuesday: Hubby's Favorite Dinner
- Wednesday: Verdure (basically an Italian stir-fry of EVOO, garlic, and veggies, including brussels sprouts, cauliflower, broccoli, a little sundried tomato, etc. I'm serving hubby's on top of a little pasta, and mine on top of some cannellini beans.)
- Thursday: Taco Salad
- Friday: Cashew Chicken & Snow Peas
- Saturday: Date Night!

Menu Plan for the Week
As you've probably guessed from my last post, we're in mourning here at Casa Dena. I thought about not mentioning it here on this blog at all -- what does it have to do with food, after all -- but I realized while it may not be about food, it is about me.
We had to put our beloved dog, Sailor, to sleep last Tuesday, and we've been basically sitting shiva since then, even though there have been some very joyous and momentous occasions that have occurred as well. We're doing our best to hold the joy and the sorrow together, which is hard, but also really important. And it's also very important to eat well and maintain routine in times of grief, and it feels very important to me to cook right now -- to eat healthy, home-cooked meals.
So here's what we're eating around these parts this week:

- Thursday: Brussels Sprout Quinoa
- Friday: Cashew Chicken (this recipe is quick and easy and YUMMY)
- Saturday: Date Night

Belated
Hellooooo out there!
My mini-blog-vacaciones is over. So I'm going to post a (belated) menu plan and a little news....

Monday: Hubby's Favorite Dinner
Tuesday: Roasted Chicken Breasts and Fingerling Potatoes, Sauteed Garlic Chard
Wednesday: Homemade Mac & Cheese with Broccoli, Salad (It was National Cheese Lover's Day, after all!)
Thursday: Cashew Chicken
Friday: Shabbat Dinner at our friend James & Eric's House
And the little piece of news that I have to share is that this Friday, I will be doing the first part of the ceremony necessary (beit din) to complete my conversion to Judaism. Woohoo! The second and final part (mikveh) will be completed on February 4th, the day before my birthday. It's been a long and wonderful road, and I am so happy to be taking this step.
So to celebrate, we'll be bringing a loaf of challah and lighting the candles and saying the blessings at our friends James & Eric's house this Friday.

Menu Plan for the Week
Hubby and I had a great Thanksgiving in Redmond, Oregon with dear friends and their family. Much turkey, stuffing, mashed potatoes, cranberry sauce, green bean casserole, brussels sprouts, and yams were consumed -- and there was even a crab feed, which hubby was VERY happy about. Lovely hikes along the Deschutes River were walked. Fun and enlivening conversations were had. Hilarious board games were played.
And now, back to life and the coming of December and all it holds. We're happy to be back home in our new house, nesting for the holidays.
So here's what we're eating at Casa Dena as we recover from the devilishly delicious gluttony of Thanksgiving:
- Sunday: Kitchen Sink/Kitchen Garden Soup (you know, like the one I made last week. So many veggies = really good for post-Thanksgiving recovery.)

Menu Plan for the Week
What a weird little truncated week this is, in terms of menu planning!
We are going to join friends and family in Bend, Oregon for Thanksgiving -- it will be a picturesque day of gratitude amongst the snow-covered mountains. And because it will be a collaborative effort, we'll be bringing a Pumpkin-Ginger Pound Cake (!) from one of our favorite local bakeries, The Humble Bagel, as well as making a new variation on my famous Balsamic-Glazed Brussels Sprouts (I'll brown them in my cast-iron skillet without boiling them first, then finish them off by roasting them at 400F for ~ 10 minutes). It will be delicious all around, I know that for sure.
Until then, here's what we're eating at Casa Dena:

Top with grated parmesan and you're in heaven.)
- Tuesday: Comfort Food Pasta (aka Pasta alla Aglio e Oglio)

I'm off to San Francisco for work this week, so the menu plan is a bit different than usual. I cook before I leave so hubby has homecooked food for lunches and dinners while I'm gone, and this is what he's having this week:

- Monday: Mushroom Pasta (this week in our Mushroom CSA we got one giant matsutake and several fried chicken mushrooms! Woohoo! I also found some gorgeous, fresh-from-the-forest chanterelles at the market for $7.99 a pound -- we're going to be eating goooood tonight.)
- Tuesday: Winston's Comfort Food Dinner (because it is like crack. Once you have it, you must have moooooore!)
- Wednesday: Sauteed Sweet Potato & Kale with Quinoa
- Thursday: Matsutake Stir Fry
- Friday: It's hubby's work's big event, Hall of Achievement, so we'll be whooping it up with the University of Oregon School of Journalism & Communication folks to fete their finest alums at the Eugene Country Club. La-di-da! Fun!

Wow it's been a while since I posted one of these, eh?
Well, what better time to get back to posting my weekly menu plans than NaBloPoMo, right? It's not that I haven't been planning out our meals weekly, it's just that I've been terrible about posting them!
So, without further ado, here is what we've been eating/will be eating at Casa Dena this week....

- Monday: Winston's Comfort Food Dinner (oh MAN that is out-of-this-world good. I gave it a little twist this time by adding caramelized onions and oooooohhhhhh.... I'm drooling just thinking about it. I left out the tomato, too, because of the season. But they were just as good, seriously.)
- Tuesday: Butternut Squash & Chanterelle Bisque (oh good god hubby and I were excited about this! Yum yum yummers!)
- Wednesday: Broccoli Rabe Pasta Bake (a new recipe I will definitely be featuring on here; it is wayyyy too good not to share.)
- Thursday: Baked Chicken, Sweet Potato Oven Fries, and Sauteed Red Chard
- Friday: Not sure yet.... possibly a quick and easy winter soup? Maybe sesame noodles? It all depends...
- Saturday: Date night!
- Sunday: Oregon Fall Bounty Hash (which is about to be posted very soon, promise! It is DELISH.)

Menu Plan for the Week

Whoa, did this week get away from me or what? And how on earth is it that it's nearly the freaking 4th of July?!?!?!
Anyway.... here's what we've been and will be cooking up around here this week!
(Anything in pink with an asterisk* is from the Farmer's Market.)
- Sunday: Sesame-Soy Soba Noodles (I told you we're a little obsessed with them!)
- Monday: Grilled chicken, summer salad*, roasted baby butterball potatoes* (Hubby started his new job yesterday, so I grilled up some extra chicken for lunches throughout the week -- salad with some sliced chicken on top makes a great summertime workday lunch.)
- Tuesday: Take-out from the Sundance Salad & Hot Food Bar because we had an evening meeting to go to
- Wednesday: Quinoa Pilaf with broccoli* and summer squash*
- Thursday: Garlic Spear* Pasta with crispy shallots, prosciutto, and pine nuts
- Friday: Tamale Pie with leftover shredded chicken
- Saturday: Happy 4th of July! We've been charged with bringing pasta salad to some dear friends' cook-out, so I'm going to go with tried and true and bring the soba noodles. Yum!
Summer is so gorgeous and full-fledged here; it's neat to be able to celebrate the 4th of July like one imagines in one's head -- something you could never count on in the summer-foggy Bay Area. Yay Oregon!

Menu Plan for the Week

This is a little belated, I realize, but -- we just got back from camping in the Willamette National Forest right alongside the McKenzie River! It was fantastic and gorgeous and I promise to post photos and recipes of our camp food soon.
For now, here's what we're eating around Casa Dena this week:
- Monday: Black Beans & Rice (made such yummy lunch leftovers today!)
- Tuesday: Pan-seared filets mignon in some kind of pan sauce that I have yet to decide upon with roasted young potatoes and sauteed garlic spears. (The filet mignon was on a serious special at the market -- it was too good to pass up! Garlic spears are immature garlic scapes, or stems, and are apparently delicious. We'll see!)
- Wednesday: Tamale Pie (I have yet to figure out exactly what this will be, too -- I'm kinda making it up as I go along. All I know for now is it will have a polenta base, black beans as the filling/protein, lots of gooey cheese, some enchilada sauce.... basically some messy yummy casserole type thingy.)
- Thursday: The undeniable and delicious Sesame-Soy Soba Noodles. Hubby has requested them every week for the foreseeable future, and I am in complete agreement.
- Friday: Not sure yet....perhaps some grilled chicken, greens from our garden plot (which I definitely need to post photos of!), and grilled toast with garlic rub for little summer sandwiches?
- Saturday: Date night!

Menu Plan for the Week
Aaaaaactually, hubby and I are on a mini-vacation in Bend, Oregon for most of this week, so our menu plan is pretty sparse!
I definitely plan on making a spring version of my Quinoa Pilaf (with yummy Italian soy-sausage) and perhaps one last ode to asparagus with this when we get back.
For now, though, we're having fun eating the delicious fare at such places like this, this, this and this.
And even though I'm on vacaciones, there actually will be a sweet little recipe coming your way very soon.... ah, the powers of technology. Stay tuned! You'll want to pull out your homemade vanilla extract for this one.

Meal Planning for Beginners
How do you make a menu for the week?I realized, after posting my menu plan on Monday and receiving the following comment from my friend Nzinga, that I've been just assuming meal planning comes easy and is something everyone knows how to do automatically.
"Seeing this post in my inbox today reminded me that I've been meaning to create weekly meal plans for...oh, I dunno, a few years now. It seems way more necessary now that we've got the kidlet and want to spend less on impromptu "missing ingredient trips". Getting started seems a little overwhelming, though."Clearly I was wrong -- and I should be the first to know this, because when I first started meal planning six years ago, I had no idea where to begin! It was agonizing. I turned to my friends and got ideas from them, and eventually was able to do it all on my own.
So, a step-by-step meal planning tutorial for today!

(so as to avoid the overwhelm)
To begin meal planning without getting totally overwhelmed, we'll stick with the KISS method: Keep It Simple, Stupid. We'll start small with planning for three meals to cook and you can work your way up from there.
1.) Set aside 10 minutes on Sunday or Monday to sit down with a piece of paper and pen.
2.) Think about your week to come -- how many nights do you need to cook? Do you have plans any nights this week that mean you'll be eating out or getting take-out?
3.) Since we're starting small and simply, we'll only meal plan for three nights. Your first meal will be the one that is easiest for you to cook, the one that comes to mind first.
For some people, this is pasta of some sort, either with a simple tomato sauce or dressed with garlic and olive oil. What is it for you? What is the first easy dish that comes to mind? Whatever that is, it is your First Meal. Write that down.
4.) For your Second and Third Meals, do you have any other dishes that spring to mind? If not, you could try:
--- Picking up a bag of frozen potstickers like I mentioned on Monday and adding in one or two veggies for a very simple and inexpensive but filling stirfry.
--- My easy and tasty Sesame-Soy Chicken with a green vegetable on the side (I often serve with chard or kale sauteed with garlic).
--- Healthy and hearty Black Beans & Rice -- this is a one-pot meal that satisfies. And it's really very simple and fast to make. This Cabbage Salad makes a great side if you feel like you need one.
--- Too hot for beans and rice where you are? This Curried Chicken Salad will not disappoint. Steam some artichoke or roast some asparagus (or both, like I often do), and you've got a complete, delicious meal.
5.) Now that you've got three meals written down, you've got your menu!
6.) All you need to do now is figure what ingredients you do not have on hand. I usually look at each meal's recipe individually and figure out what I'll need for each, writing it on my grocery list.
And you're done! Off to the store with you. You are now set for three nights of delicious home-cooked meals. With only ONE trip to the grocery store. How about that!

Menu Plan for the Week
Here's what we're eating for the week. Someone asked me recently how I can manage to plan out what we're eating for the week here at Casa Dena, and I had to tell them the truth: I can't imagine not doing it.Honestly -- how else do you know what to buy when you go to the store? I try to only go to the grocery store once a week, and with my list in hand that is informed by my menu plan, it's the only way I can conceive of doing it.
Plus, I read an article recently on small ways to cut spending and make our households more recession-friendly, and menu planning was one of those tips. You spend less when you plan out ahead of time what you'll be buying. It seems simple and so self-evident, but it really does work.
In fact, my (wonderful) boss, who has a family of four for whom she regularly cooks, told me once that during a meeting in which she and her partner were refinancing their home, she was asked to figure out how much she spends per month on what. And she shocked everyone, including herself, when she did the math and realized she spends (and I am not exxagerating her, folks) $2,000 per month on groceries!!! For a family of four!!! She nearly fell over in her chair, and so did I when she told me. Now, granted: she shops exclusively at Whole Foods. So she's not bargain shopping. BUT the main reason she spends so much is because she goes to the store nearly every day. She plans only as far as that evening. And lo and behold, she spends more. I tried to convince her to plan for the week, but she said she'd never be able to, that she can't know what she's going to want to eat tomorrow. But I wonder if maybe she's changed her habits in this new economy.
Anyway... here's what's cookin' at our house this week (anything in red is local, seasonal, organic, and most likely from our Farmer's Market ):
- Monday: Potsticker Stirfry with Baby Bok Choy (I get a bag of those great frozen potstickers at TJ's, fry them up, then add veggies of all sorts. SO EASY. I like it because it's a combination of a budget dinner and incorporates a local, seasonal vegetable.)
- Tuesday: Potato Latkes & Cabbage Salad (Hubby found some potatoes in our community garden plot as he's been de-weeding it and brought them home to me. I took one look and saw mounds of luscious golden potato pancakes in our future.)
- Wednesday: Kale Rabe & Shiitake Mushroom Rice with Tahini Sauce (the lovely winter greens are starting to flower, and the farmer's market is ripe with florettes of all sorts; they are delicious!)
- Thursday: Brussel Sprout Rabe & Sausage Pasta (see what I mean? It's all over!)
- Friday: Grilled Chicken Skewers & Grilled Asparagus
- Saturday: Date Night

Menu Plan for the Week

Oh what a beautiful day!!!
It is 80 degrees here in Eugene. Sunny and blue and just everything you could want out of a mid-April day.
Made me want to sing this this morning:
We did make it to the Farmer's Market on Saturday, on our bikes, after hitting the library book sale. What a perfect day!
And here's what we'll be eating in Casa Dena this week, thanks to the bounty we found at the Farmer's Market. Anything in green came from the Farmer's Market and is local!
- Monday: Grilled grass-fed hamburgers from Deck Family Farm, asparagus, and arugula salad
- Tuesday: Trader Joe's Thai Veggie Potstickers with Baby Bok Choy and Broccoli
- Wednesday: Out to cheap and casual dinner with friends
- Thursday: Quinoa Pilaf with Oyster Mushrooms (did you know that 2 cups of oyster mushrooms has 19 grams of protein?!?!?!)
- Friday: Turnip Raab and Garbanzo Bean Rice
- Saturday: Date Night
Mmmmm.... tasty, seasonal, and healthy. Can't wait to grill burgers outside in the warm evening air tonight!

Farmer's Markets

I don't know where you live, but here in Eugene, Oregon, spring has really sprung and everyone's feeling it all over.
An interesting thing about living here in Oregon is that unlike in California (from where we moved 8 months ago), farmer's markets don't usually run year-round. At least the Eugene one doesn't, anyway. It runs until November 14th, with a mini-extension at the Holiday Market through the end of December. After that, we're all waiting and watching and hoping until April!
Well my friends, the Eugene Farmer's Market is back and it is beautiful and wondrous. It's actually been another really cool signifier of the change in seasons and of spring's gracing our part of the globe.... Cherry blossoms, daffodils, magnolias, singing birds, longer days, sun higher in the sky, and the farmer's market!
Part of my meal planning for the week now includes stopping at the farmer's market every Saturday to see what bounty catches my eye. Whatever looks good, we buy. From those ingredients, I craft my menu plan. It's kind of fun and interesting, a backwards way of planning. Keeps things fresh around here. Plus it celebrates the season perfectly.
Wherever you are, I hope you're near a farmer's market. And I hope you take a chance and stop by -- the produce will be unparalleled, and the experience of shaking your food's grower's hand and handing over cash directly to them is immensely gratifying.
As Earth Day approaches, I am saluting my local farmers. And hoping to keep them in business. We need them now more than ever.

- Thursday: Company Dinner because well, we have company coming over!
- Friday: 10-Minute Asparagus-Tahini Rice (I add shiitake mushrooms and German butterball potatoes from the farmer's market...YUM!)

Menu Plan for the Week

Well it's been a little while since I posted one of these. I assure you: I have not been without a menu plan these past several weeks, I have merely been lazy, forgetful, busy, or some combination of the three.
Anyway.
My menu plans have changed a bit recently, and not just because of seasonality! I am trying to cook as leftovery and economically as possible. So, I have started making as many things that provide delicious leftovers as possible. Hence the increase in pasta dishes. The fact is that pasta stretches a meal, cheaply. As do beans. Which is why you'll see more chilis and bean stews around here, too.
I would love, love, love any recipes or websites you know of that talk about how to cook frugally and to make food last longer than one meal. Send 'em on over!
Plus the kind of meals that make great leftovers are usually comfort food-ish, which are great cold weather dishes, too.

- Sunday: Leftovers from last week (see what I mean?)
- Monday: Yummiest, craziest pizza ever from the Pizza Research Institute (makes GREAT leftovers; enough for a whole 'nother meal for two people)
- Tuesday: Chanterelle-Butternut Bisque (saw beautiful wild-foraged chanterelles at the Farmer's Market this weekend and could not resist. Plus this soup makes great leftovers, too!)
- Wednesday: Baked Ziti (I gotta post my recipe for this. It is quick, easy, TASTY, and in terms of making a pasta meal last -- you just put the pan in the fridge and keep coming back to it.)
- Thursday: Black Beans & Rice -- double batch for twice the leftovers. Oh yeah!
- Friday: Brussell Sprout Quinoa (which I will post tomorrow, I PROMISE. Oh I know; you've heard it before. But this time I really am gonna do it.)

Thanksgiving Planning

As I get ready for a week from today (!), my first step is to plan our menu for Thanksgiving. Keep in mind this is meant to be a simple dinner for two.
And here are my thoughts so far:
- Turkey Roulade with Wild Mushroom Stuffing (I am looking for the recipe for this specific dish online; currently it only lives in my November Everyday Food magazine.)
- Some sort of potato dish -- trying to decide between creamy mashed potatoes or something more like the Pioneer Woman's creamy herbed potatoes (like scalloped potatoes).
- French Green Beans with Crispy Shallots and Mustard Sauce
- Cranberry Relish
- Winston's Peppermint Brownies with Straus Vanilla Ice Cream
What am I missing/forgetting? Do you have any recipes that I simply cannot miss this year?

Menu Plan for the Week
The weather has definitely changed here in Oregon, along with the leaves, and it's lovely.The crisper air is inspiring dishes that I had put away, that I haven't turned to in a long while, and it kind of feels like coming home to old friends.
This is what we're eating at Casa Dena this week:
- Sunday: Hearty Autumn Chili
- Monday: Homemade General Tso's Chicken (will post recipe and pics soon -- it was awesome!)
- Tuesday: Brussels Sprouts with Quinoa (one of our very favorites around here; I have got to take photos and post this one! We keep eating it all before photos can happen. But not this time!)
- Wednesday: Broccoli Rabe Pasta with Italian Sausage
- Thursday: I'm taking a cooking class! It's called "Wild About Oregon Mushrooms." Hubby will fend for himself for dinner. I can't WAIT! Here's what's on the menu for my class:
- Wild Mushroom Canapé with White Bean Puree and Mascarpone Cheese
- Butternut Squash Bisque with Chanterelle Mushrooms and Olive Oil
- Pistachio Crusted Chicken Roulade with Caramelized Mushroom Fontina Ragu
- Creamy Herb Polenta and Roasted Pepper Coulis
- Apple Tart Tatin with French Vanilla Ice Cream
- Friday: Some kind of quick and cheap takeout....
